Baluarte is the personal project of chef Óscar García, a space where the avant-garde and Sorian tradition are found to elevate the production of the earth to its best expression.
Óscar García: The Master of truffle and mushroom
At Restaurante Baluarte, the kitchen isn't understood without the environment. Óscar García, from Soria, has been able to place his restaurant as one of the best in Spain in the treatment of black truffle (Taser Melanosporum) and wild mushrooms, applying innovative techniques that respect the purity of the original flavour.
A Soria Underground Menu
The experience at Baluarte is defined by the master use of local resources:
Specialists at Trufa: During the winter season, the menu revolves around the "black jewel" of Soria Mountains.
Seasonal Mycology: From boletus to perrechyics, the letter changes with the cycle of Sorian forests.
Scuba and Hunting: iconic plates such as temperate scuba or pits have an impeccable technical domain.
Orerta Soriana: The use of local vegetables to create gazpachos and high cuisine.
Elegance at the historic place
Located on Knights Street, in a signage building close to Plaza Mayor, Baluarte offers a sophisticated, minimalist and welcoming atmosphere. It's an ideal place for those looking for a global gastronomic experience without losing their connection with Castile's roots.
Retirement: Besides his Michelin Star, Baluarte is a pilgrimage destination for critics and gourmets who seek authenticity and excellence at every snack.
Address: C. Knights, 14, 42002 Soria. Reservation is recommended in advance. < / p > < / Section >
